Normally the Variable search dialog box only displays common variables, meaning those variables which are component of the selected directory and its subdirectories. The same applies for the display under Suggestions -> Variables for <Selected directory>.
Variables which should be displayed in any case can be stated in the following way:

Add the key SEARCHVARS with the disired variables.
SEARCHVARS = D
This key is used by the generation of the full-text search index to add variables to the search.cfg, even if they are not common in all directories. Variables listed in this key are treated with highest priority by the searchvar generation.
Now the additional variable is displayed on the respective level.
